Chocolate, white, milk, dark, in all its forms forms life. Chocolate truffles, caramels, and other confections are at the core of enjoyment. This is life by chocolate because death by chocolate is the wrong attitude.

Beautiful Fall Colors


Words could not do our beautiful fall colors justice. So, here are the pictures I took today. Yes, we still have our colors. Come on out to the Greenville Arms, see fall at its best and eat our wonderful chocolates. Have a cup of Life by Chocolate hot! It doesn't get better than that.

As this bush shows, we are still far from peaking here at the Arms. The rest of the world may have peaked or past its prime but not Greenville and certainly not the Arms. Come and see.

Dan Tat revisions


I have decided that the best Dan Tat comes with blind baking the pastry for 10 minutes, letting it cool, filling it and then continuing on with the recipe. The most important thing is to dock every square millimeter of the pastry gently. In other words, no tears, no holes but plenty of forking. To get an even flakier pastry, bake the Dan Tat for 1/2 hour. I personally like this pastry better when it is baked with convection for 15 minutes.
